if so. how can u make it so they never see u online again ? (cuz gettin in their account & deleting yourself from their list is impossible unfortunately =( ... )

No. They can't see you...
You must have to put them in ignore list and must delete there address from messenger list...

Make sure you leave them on your buddy list though, Just right click on their ID, Scroll down to Stealth Settings, And Hit Permanently Offline
Then make a New Group Called Iggy'd. Works for me

I saw that even if someone's in stealth mode, you can tell if they're online also by sending them and email. When you click the send button, the next screen shows you if the person's smiley face is lit up or not.

No, they can't see you, but you must add them to the ignore list and delete them from you're IM list and address book.

there are block status checkers for MSN messenger. I dont know for yahoo, but if u have iggy'd someone on MSN, the other can check it from the block status checker that is on www.mess.be
