It is about a man who goes on a quest but instead runs into a wise old Chinese dragon who visits him periodically and tells him parables related to faith and sprituality- It's St. George and the Dragon or something like that.

I'm not sure which dragon you're looking for, but Dragonheart sure didn't look Chinese to me...but you might be thinking of "The Legend of St. George and the Dragon". On the other hand, the legend doesn't say, either, that the dragon was Chinese, or spoke Chinese. But I might be just Confucius-ed.
