This is an excerpt from the book and it doesn't say.
Hook was not his true name. To reveal who he really was would even at this date set the country in a blaze; but as those who read between the lines must already have guessed, he had been at a famous public school; and its traditions still clung to him like garments, with which indeed they are largely concerned. Thus it was offensive to him even now to board a ship in the same dress in which he grappled her, and he still adhered in his walk to the school’s distinguished slouch. But above all he retained the passion for good form.
And from earlier in the same chapter:
One green light squinting over Kidd’s Creek, which is near the mouth of the pirate river, marked where the brig, the Jolly Roger, lay, low in the water; a rakish-looking craft foul to the hull, every beam in her detestable, like ground strewn with mangled feathers. She was the cannibal of the seas, and scarce needed that watchful eye, for she floated immune in the horror of her name.
So if one puts 2 and 2 together and "reads between the lines" I would say Barrie is saying his name was James Kidd, but that is JMHO.

great question. here's a quote for you: Captain James Hook is the villain of J. M. Barrie's play and novel Peter Pan. Hook is a pirate captain and Peter Pan's nemesis. It is said that he was Blackbeard's bosun, and that he was the only man Long John Silver ever feared. He wears an iron hook in place of his right hand which was cut off by Peter Pan and eaten by a crocodile. The crocodile liked the taste so much, it follows Hook around constantly, hoping for more. Hook hates Peter obsessively and lives for the day he can make Peter and all his Lost Boys walk the plank. Lest anyone think Hook's name too convenient, Barrie notes that "Hook was not his true name. To reveal who he really was would even at this date set the country in a blaze." [1] Barrie also suggests through several clues that the Captain was an Old Etonian — in Barrie’s short story “Jas Hook at Eton,” Hook’s final words before jumping overboard are “Floreat Etona” (115).

Hard to guess from your phrasing that this was intended as a joke Q. Were it not for the fact that there are genuine answers, I'd say the joke is actually funny. On to my serious answer...
James Hook was identified as the pirate "Black Stache," before his hand was eaten. This was not in the original text by Barrie, but in the sequel by Barry.
Barrie was somewhat conflicted on the subject.
"Hook was not his true name. To reveal who he really was would even at this date set the country in a blaze;"
--Peter Pan, Ch. 14, The Pirate Ship
and later, after his hand was eaten:
"Bad form," he cried jeeringly, and went content to the crocodile. Thus perished James Hook"
--Peter Pan, Ch. 15, Hook or Me This Time

What his name was before is completely irrelevant, as in the sotry his hand has already been eaten, therefore he is Captain Hook. Before the crocodile ate his hand, he didn't actually exist (not that he does at all, obviously!)

In the original, you never learn about Captain Hook's life before Neverland. I can think of just one incarnation, the cartoon series that originally aired on HBO, where you do learn his back story. In that series, his name was always James T. Hook.
