They filmed most of it while they were filming the second movie, so it's almost all the way done. It's called Pirates of the Caribbean: At World's End and IMDb lists the release date in the US as May 25, 2007.

Pirates 2 and 3 were filmed at the same time so it is all completed (apart fromsome possible post production tweaks).
It is due out 2007 I have heard Easter time mentioned.
