Should I wear a business suit or is that too dressy?
Would khaki's, dress shirt and tie be fine?

I'd suggest a suit and tie. Since, as an Officer, you will be expected to appear in court, you should look like a professional who would fit into the court setting.

When I interviewed for my job, I wore a tailored jacket, a matching floral skirt, and a nice blouse, as well as hose and heels. That's not what I wear everyday to work as a Probation Officer, but I wanted to look very professional for the interview.

I was interviewed and subsequently invited to a second interview for a Deputy Probation Officer position. I wore a suit and it worked out well.
