I'll go with SRV and tell you a story.

I forget the year but I'd guess around 1982 I was working in a Road House in New Mexico. George Thorogood was booked for the evening and his crew started talking about the "opening act." We knew the contract and the tech rider said nothing about an opening act!
So we asked who it was and their Crew Chief said, "some guy they saw at a bar in Texas last night." Normally, a road show has it's own lighting guy, but the opening act did not.
The curtain came up and we, in the booth, pushed some lights up. This guy starts ripping on some Hendrix stuff, even humping the speaker stack -- we were amazed! So, we start calling follow spots and jamming the lights along with the music.
Probably a 45 minute show, it wasn't until months later we heard about this guy (was it the US festival?) who was tearing it up and we saw that it was that same guy -- Stevie Ray Vaughn.

Great list - we all want to add names to it. I'd chime in with Jimmy Page, David Bromberg, Duane Allman, Bonnie Raitt and Brian May.

Eddi Van Halen.
All the above are excellent options and you could make a great case for any of the above. But Eddi brought a love to his playing that I've only seen a couple times. He also has incredible range - have you ever heard him play classics like music from Bach? Carlos Santana (not on you list) is another in that rarified air.
