I've never been there, but everyone I've talked to tells me these horror stories of, "It's gorgeous over there but unbelievably expensive," or "I pay $8 for a gallon of milk", etc...
Is that how it is everywhere in the Hawaiian islands?

Yes it is expensive to live EVERYWHERE in Hawaii. What you consider "unbelieveably" expensive depends on what you are acquainted with. I personally didn't find it any more expensive than Alaska.
