I am aware that the play is over once the ball hits the ground, but what if the defense caught it and returned back?

Running the ball into the end zone is always six points, regardless of how the runner gets the ball.

OK, back up a second: For starters, the play is not necessarily over once the ball hits the ground. Let's say the center made a bad snap and the holder can't grab the ball for the kick. If the ball bounces around, the ball is in play until it goes out of bounds or someone grabs it and either (a) runs in into their respective end zone, or (b) gets tackled. So let's extend that play a little: The center makes a bad snap, the holder can't grab the ball, and the ball bounces away until it is picked up by a defenseman who runs it the length of the field and ends up in the end zone. That equals no extra point for the kicking team and six points for the defense's team.

If they block the extra point and take it back to their own end zone, it counts as a touchdown and is 6 points. Then they get to kick or play for the extra point, or points respectively.

They don't get any points for blocking the extra point.
And it would be normal score of 6 if they returned it to their end zone.

Which level of football are you talking about? High school?
College? Pro? In college, I think it is two points.
