Crystals grow when a solution is saturated and cools down, (usually), or some of the water evaporates. The largest crystals are the one that grow the slowest. So the evaporation method is better if you want pretty crystals.
As a general rule a compound is more soluble in hot water than in cold water.

I did an experiment in Grade School. we disolved Calcium Bicarbonate in hot water. we had 2 set ups, the 1st one we had it cool down in room temp and the other we put in a bucket of ice. we observed thatn the one we cooled in room temp produced larger crystals than the one we cooled in the ice bucket.
