If it works like a sort of soap, why won't it eventually not turn black?

rubbing compounds work in 2 ways
first an abrasive mixture which is almost like liquid sandpaper
second a chemical lubricant which "lifts" the abraided material off the surface much like soap lifts dirt off dishes
it actually changes the frictional coefficient of the matter it is lifting
if you continue buffing you continue removing material just as you would if you were using sandpaper
the black will always occur

Well if it's a black car, then quite possibly. I don't recommend using rubbing compound on it every time, unless your driving through a steel wool entry way everywhere you go. This will dull the finish after a few times, because you are scratching the clear coat.

that rubber is black is because of carbon content. they use carbon as a filler to strengthen and extend the material. it will always be black unless they have multilayer with rubber without carbon black
