How is the residue (carbon) formed?

It is not formed but it is what is left... all organic material from glucose to fat, protein & starch are some or the other way the complex chain & bonds of Carbon & other materails.. once they are heated the bonds break & simple Carbon is left...

All organic molecules consist carbon (they have so called carbon skeleton). When they are destroyed, only carbon remains.
