I have a 30GB iPod Video, and I love it. I considered the Nano because it is less expensive and smaller, but I decided that the larger storage capacity of the Video was worth the extra $50.
Today, you have essentially 3 iPod options:
The Shuffle is relatively inexpensive at $79 and incredibly tiny. However, you can't select the songs - you can either play it in the order you put it on the iPod, or in random order. Also, it is only 1GB which is about 240 songs. Great if you're going to use it for workouts, or are willing to spend more time on your computer loading and unloading songs.
The Nano costs between $149 and $249 depending on the storage capacity. It is still fairly small in size about 3 1/2 inches high. The smallest is 2GB, which holds about 500 songs, and only comes in white. The largest is 8GB, which is about 2,000 songs, and only comes in black. The 4GB comes in several colors and holds about 1,000 songs. The Nano has a screen, which allows you to choose the music you listen to, from the entire list or from playlists. The Nano also allows you to load photos for viewing on it's 1.5 inch screen. Tiny, but viewable.
The iPod Video costs either $249 or $349 depending on the storage capacity. You can choose either black or white. It is about 4 inches tall, and has a 2.5" screen, which is remarkably clear. It's bulkier than the Nano, but still remarkably small for what it does. In addition to music and photos, you can download games, music videos, television shows, and even movies. The 30GB holds about 7,500 songs, and the 80GB holds about 20,000 songs. That's the equivalent of about 1,700 albums - way more than most people own. By the way, you did read that correctly - the 30GB iPod Video costs the SAME as the 8GB iPod Nano, and you get nearly 4 times the storage capacity.
You can purchase music, tv shows, movies, videos, and games through iTunes at very reasonable prices. You can download podcasts for free from several sites. You can copy your own CD's to the iPod through iTunes, and with additional software, can transfer your own DVD's to the iPod Video.
Everyone has their preferences - some people swear by their iPods, and others just swear AT them. Honestly, I think you're going to have plusses and minuses no matter what mp3 player your choose. Personally, I love my 30GB iPod. I've had it for about six months, and I have 1 movie, 2 videos, 16 tv episodes, and about 1,600 songs on it, and it is less than a third full.

For memory, the one with 8 gigs
For size, any I-pod nano.
Color is your opinion.

iPods are a rip off... a 2GB iPod nano was $200 last christmas, my parents bought me the 5GB Creative Zen Micro for $185. While larger than the iPod nano, it has more memory, a built in radio that you can record off of and set preferred channels to, and a built in microphone. which was a better value? which will be a better value a year later when this christmas rolls around?
if you can honestly say it'll be the iPod and change my mind that we are not paying 15 dollars so apple can say our product gets sold because of it's name, then I'll shove my Zen Micro up my *** and spit it back out my mouth
