I am applying for 3 jobs that I would have a good shot at getting. Not to put the cart before the horse, but what is the proper thing to do if you get a job offer, but you are still waiting to hear on the results of another interview? Is it okay to "think about the offer" and for how long?

Yes it's okay to say that, but only for 3 days
If not accept the first job offered and then if you get a better offer call the first place back and tell them, something better came up

Try pushing the other companies to making a quick decision. Tell them that you have to make a decision on another officer within 3 days. If the other companies are serious they will move. Otherwise you will just find out sooner that they are not motivated.

Also think of other possible information you might want to know from the first company. Maybe request for more information about employee benefits, get to know more about the people you will be working with etc. Ask for information or meetings so you can delay the decision making for a few days. However, be careful that this may back fire. While you are learning more about them, the reverse is happening as well.

If you are working with a recruiter, it is much easier to have the recruiter make something up to stall the process for a few days.
