Typed my name into a Person search and found a lot of info on my realatives, their ages, my age(s) (some were wrong). I think that somehow I should have the right to have this stuff stay private.

It is almost nearly impossible to not leave a paper trail, but there are methods of reducing paper trails. Like when you go and get your drivers license there is a special opt-out. A lot of times public records are sold by states and counties to websites to compile databases of public records. When you opt-out you opt-out of your public records being disclosed to these types of companies.
Also when you get your drivers license opt-out of putting your SSN# on it.
But anything else like tickets, or any other criminal charges are all public records and can be accessed by anyone.

Unfortunately, alot of what you would consider private information, is in reality, public knowledge. Govt records are open to all individuals. Phone numbers if not requested to not be listed is available to anyone, Birth and marriage records are also public record. In fact, in the US, you can request copies of anyone's tax return, under The Freedom of Information Act.

Sorry

You think you have the right to privacy. Other's think they have the right to your "private" stuff. You loose. Hence, the Freedom of Information Act.

You can't. Everyone leaves a paper trail and most of that stuff is public record.
