It is collecting the dirt from the ground, it gets in the cracks in your feet. It is black, because most of the things build up on the bottom, and so many colors mixed together make black.

what other color would you expect dirt to be?
I also think that those people who walk on hot coals have black bottoms because litterally that part of their foot is dead, it has no feeling and no blood running through it, so it just turns black and gets hard.
