Like other animals, some are nocturnal (like eels and octopus), some are diurnal, like most freshwater aquarium fish. You will notice a fish lying quietly on the bottom to rest. In my saltwater tank, some of the fish change colors at night and some bury themselves in the sand. Parrotfish blow a bubble of mucous to hide in at night.

Yes, you just cannot tell because they can't close their eyes. Many fish rest on the bottom or in a hiding place at night. Other float lazily in the water column.

I know that if one is not careful one could end up sleeping with the fishes. Watch out for those damn mods

Yes, they do. but they do not have eyelids, so people mistaken them for not sleeping. Open swimming fishes do not sleep as they spend their time swimming especially at night but reduce their movement considerably in daylight hours.

yes
the fish on corals seem to wrap themselves in a protective skin and settle down for the night
they have no eyelids so who knows when they are asleep
if you go "booo" when they are sleeping they don't like it (so don't do it!)
