Oh, heavens! The answer to that question could fill a library of books... Half of all European languages are based on Latin. We still copy their architecture. Many of the roads, aqueducts, and ports they built are still in use, and several ancient churches were built during the late Empire. Writers like Ovid and Pliny created patterns of writing and speech that we are still using. And the Romans' "scientific knowledge" was all that we had until the Renaissaince, because after the Empire fell we stopped thinking about earthly things and only worried about salvation (look up "Dark Ages"). This should give you a start... I could go on, but I can't give you any citations for reference, and so it would be pointless if you're writing a serious paper....
