its called adaptation to their surroundings. white color is a good camouflage in the snow, so that it makes it easier to attack preys.

The polar bear's hair is, in all actuality, clear. It looks white, because you see the edges of it bending the light (the same is true of white hair in humans, btw).

Underneath the hair, the polar bear's skin is black.

So, the sun shines thru the hair, and gets warmed up by the black skin. Then, the hair holds in the warmed-up air, so the bear can stay warm on land, and even in water.

Additionally, the white helps to camouflage them in the snow & ice.

I've also heard that if they weren't white, they're black skin would actually make them too hot...
