A bootleg recording (or bootleg) usually refers to an audio or video recording of a performance, not officially released by the artist. The most common being a live bootleg, recorded with smuggled equipment.

Bootlegs may be copied and traded among fans.

Some artists are perfectly happy for people to bootleg their shows: http://bt.etree.org/ Etree

Some bootlegs have been released recordings

To further complicate things, in the past few years, "bootleg" became an alternate term for "mashups". A mashup being a remix of two or more musical recordings melded to make a new track. (See DJ Dangermouse - The Grey Album)

This answer covers most meanings, but I suggest you look at the wikipedia article, where most of this was ripped from :D

A bootleg recording (or simply bootleg or boot) is an audio or video recording of a performance that was not officially released by the artist, or under other legal authority. A great many such recordings are simply copied and traded among fans of the artist without financial exchange, but some bootleggers are able to sell these rarities for profit, sometimes by adding professional-quality sound engineering and packaging to the raw material.

Bootleg is a term that started with the illegal alcohol trade to avoid taxes, derived from a method of hiding alcohol in flasks in the shanks of a boot. But it has become a generic term for any illegal activities pertaining to sales by avoiding to pay the proper people for those items.
