You tell them you are having a doctor's appointment instead. Also, tell the person you are interviewing with that they can call your last employer AFTER they hire you. Most people understand the need for discretion. I've gotten every single one of my jobs while I was currently employed.

Call in on the day of your interview. Tell your boss that your car broke down and you had to take it to the shop.
Another thing to be careful of is employers to whom you send resumes because they might call your current employer! That's happened to me a few times! I have started to take out the name of the current company that I work for and put in the type of company that I am at. I leave everything else--duties, start of employment in. I just started doing this, but I am not really sure if it's a great idea. However, I don't want everyone at my current job to know what I am doing.

hi,
first, obviously, never quit before you don't get a signed contract;
then, as your boss seems to be a big controller, never ever use phone, email in the office, never; she may be track your communication habits;
simply call her the other company during lunch time and fix a meeting; head hunters are specialized to meet in the late afternoo / evening and on saturdays; or on lunch time, too; in the worst case, as all this should not be possible, ask for a one day permission...your may invent the excuse that better fits to you...doc, family, other higher obligations...
if you have to make more than one interview, use your organisation skill too meet them all or on early in the morning or on lunch time or in the later afternoon or evening or on saturday or on a one-two day-permission or more during a short vacation period;
in the very worst case (not so clever), especially if you are very proud, just quit! and than look for a job; don't do that if you don't have a reserve in cash : )

If you have vacation days, take them and go on interviews then. Your boss doesn't need to know what you did on your vacation days. How are you going to go on an interview if you can't get off? Will they meet you on a Saturday or after hours?

If you can't schedule multiple interviews during vacation, ask the interviewer if you can meet on weekends.
