I will take a wild guess that it would be a depth so that the frozen atmosphere weighed 14.7 pounds / in^2 So you just need the density of solid oxygen (20%) and solid nitrogen (80%) to get your depth.

You will have to look up the actual density, but if I assume that the combined density is the same as water, then the depth would be about 30 feet.

If the sun "went out" it would immediately collapse and then explode. When this happens, the star (sun) ,then becomes a Nova. A nova is a massive explosion that would completely envelope Mercury, Venus and the Earth. Therefore, the Earth would be destroyed way before anything got to freeze.
