AM means AMplitude Modulation is a modulation techinique used in radio signal transmission, it is older than FM
FM means frequency modulation , it is widely used and less prone to noise than AM

Back from my engineering degree days (waaaaaay back) I believe that refers to how the sound waves are transmitted and how the receiver (radio) must be tuned to properly decode them (or something like that, I slept in class lot in college)
