then enter and wait for it to complete. When you see a new line prompt... you're done. All your music should be in there, in a bunch of numbered folders that the iPod creates

YES! you can. Most people dont know that you can do it without thrid party applications, but you can. All you have to do is make sure that the ipod is enabled in disk mode in itunes. Then, go into my computer and open up the ipod. On the top bar click on "Tools" then "Folder Options...". From there click on "View" and in that list there should be an option that says "Show Hidden Files and Folders". Enable that and you should see more folders under your ipod in my computer. There should be one that says music, click on that and drag all of the folders into the new folder you want to put them in. They will be sorted funny but if you consolodate them in itunes they will show up normal. Hope this helps.

The third party apps will let you, but it is a process.
i-Tunes 7 will let youtransfer your downloads, but not your uploads.
I have i-Pod transfer and Tune Tools for i-Pod. They take a long time.

Not according to Apple...but thre are third party applications on the Internet that appairently allow you to do this.
I have not tried them so I cannot give you first-hand advice.
But like anything else, be careful as to what they claim they can do.
