it starts in a solid state. (powder) mixed with water at liquid state. Then as the liquid state jello cools, it forms a semi-solid state. Jello was invented in Leroy, New York.

I believe that gelatin is a colloid. Colloid - a mixture that is not a true solution. They have large particles that are kept permanently suspended.
The Jell-O brand was invented in 1897 in NY.
