The speed doesn't matter. What matters is the change in air pressure. It causes a differential pressure across your eardrum.

pressure at sea level is usually 14.7 psi. The pressure inside the cavity of your head (like your sinus cavity) is also at 14.7 psi. Why? Quite honestly so your head does not either implode or explode--okay so not explode as if dynamite was used, but too great a pressure difference too quickly can cause injury. When you change your altitude or go scuba diving in water, the outside or atmospheric pressure changes relative to the inside-your-head pressure. It needs to equalize. The "popping" you refer to is the euqalization process.

pressure in your internal ear is dcreased, so the ear drum is sucked inwards, causing a lot of pain.....
best way to prevent this is by keep chewing gum while ascend or descent of aircraft. This produces saliva in your mouth, keeps your throat and eustachian tubes (tubes connecting inner ear with throat) open.

usually it pressure changes caused by elevation . . .go deep underground is an elevation change ..
in an aircraft it's caused more by the elevation than the speed.

the amount of pressure and the amount of fluid in your head/ear canal all depends on how often, how hard/bad, and when your ears pop so that is why at higher or lower altitudes is diferent pamounts of pressure so it all just depends
hope i helped!!
