There are a few things, but mainly oil loses it's stability and ability to lubricate over time. Small pieces of metal from the engine that are usually filtered out by the filter, are recycled through the engine and it causes excessive wear and damage to the components of the engine.
Oil does burn off too - very slowly and usually unnoticeably. But you will eventually have oil in your car that is black, the consistency of molasses and virtually useless. The metal in the engine will become superheated and the cylinders and pistons will sort of weld themselves, or bond themselves together and your engine will seize.
For the 19.99 it costs to get it changed, it's the single most important thing to do to keep your car running solid - change it every 3000 or 3 months, regardless of what your manual says.

You can usually go longer than 3 or 4 thousand miles on an oil change, but if it gets too old or too low you could terminally damage your engine.
If you don't care about the car, run it til it locks up and burns up. If you like it, take care of it and change the oil now and then.

The light ends of the oil will evaporate, the byproducts of combustion will overcome the oil's ability to neutralize them, you'll get sludge, which will plug the small passages in the lubrication system, bearings will dry out, you'll get metal on metal contact and your engine will sieze. It's basically the same as draining all the oil out of your engine, only dirtier and not as quick.

all of the dirt and grime that bypasses your filter can get sucked up from your oil pump and starts the build up in your engine it can clogg the drain holes in the valve cover start your valve cover leaking to much oil in them and not draining correct thus starving your engine from lubrication, including your bearings no oil or not enough means a lot of friction engine will sling a bearing and lock up the engine but if you don't change it because of money being tight rule of thumb if you can't see through it change it !! Remember oil is like blood to an engine that includes water and antifreeze that cools you engine keeping you engine cool is the key!! ALWAYS CHANGE YOUR OIL IT IS CHEAPER THAN PAYING FOR ANOTHER ENGINE OR CAR!!!!!!!!!!!

If you do not change engine oil, eventually the engine will freeze up. Engine oil loses it's ability to lubricate over time and become a tar-like substance called "sludge" that will destroy the engine.

Oil turns to sludge, stops lubricating the moving parts, and BOOM! either you'll spin a bearing, the engine will sieze, or something else involving excessive friction between moving metal parts. Then you pay a couple hundred for a new motor.

The vehicle will break down - will cause internal damage which can lead to you replacing the motor/engine.
Oil services are done at 3000 miles , 7500 miles or 15000 miles on some cars.

If metal parts that rub against each other are not lubricated they will heat to the point that the metal of each part will soften. When they cool, they will be welded together.
Of course, that's extreme.
