Check out these sites below. Most colors are due to phosphors painted inside the glass. The neon excites them as it emits UV light after being excited by the electrical discharge.

Neon signs do not just contain neon, but also the other NOBLE GASES.
Each noble gas burns a different color, neon=pink; krypton=green


A sign consists of a glass tube filled with a noble gas and a copper wire with 2 transformers at each end. An electric current is passed through the glass tube and voila a neon sign

"neon" signs are actually filled with all sorts of different compounds. Electrons surrounding the nucleus are "excited" meaning they move farther away from the nucleus. This isn't a stable state for the atoms, so they give off energy (which is the light we see) so the electrons "fall" back down closer to the nucleus. The various colors come from the variety of jumps of the electrons.

The Neon sign works due to trapped gasses that travel through the tube that makes up the aformentioned sign.

What happens is that the gases are excited by the electricity and when they go back to the ground state energy is released in the form of light. this light has a certain wavelength based on the gas content which gives the different color signs
