Are there any of you out there who happen to know of decent sources of information concerning enzymes? Nothing incredibly technical is required, just some general information dealing with enzymes. Any help will be appreciated.

Food stains are usually removed by a combination of emulsification, which is breaking down large molecules into smaller ones, and then breaking down the smaller molecules chemically. Enzymes are chemically structured to fit the substrate molecule like pieces of a puzzle. The enzymes in the washing powder are most likely a combination of lipases, proteases and amylases. In other words, they break down the biochemicals in the food stain which are lipids, proteins and starches. Once these molecules are chemically broken apart, it is then easy for the water to remove them from the clothing. Water is an excellent solvent, and so the broken down molecules dissolve easily in the water once the enzymes break the chemical bonds holding them together.
