I want to not go through the expense and mess of tearing out the old plaster. Some of the plaster has backer board and some has the lattice backing.

Locate and mark your studs in the walls with a chalk line. That way after you put up the drywall you can still see where the studs are. Start adding drywall a sheet at a time. Make sure your drywall screws are long enough to go through to the studs. Repeat for the ceiling. Tape, mud, and sand. Primer the drywall and then your ready for your paint.

Batten the wall to obtain straight, plumb surface. Fix plasterboard, tape joints, paint with sealer, apply scrim plaster.

Perhaps get in a professional.

I've used furing strips to fasten the sheet rock to the walls.Works well and not that much extra expence. Good luck
