as i recall, corian is sandable.. so the answer would be sandpaper.. probably a 600 grit or finer..

Corian is workable with any woodworking tools, so sanding would be the simplest. Depending on how deep the scratch is, begin with either #100 or #150 sandpaper, then go to #180 then #220.
