Well, there are several ways to achieve this,
1) eating green leaf vegetables like Palak etc.,, fruits along with moderate exercise.
2) If possible, staying for few weeks/months in hill station. Since at high altitudes like hill stations oxygen is less dense, living in Hill station helps in increased production of RBC/blood cells, thereby enhancing the overall health & stamins.

A number of options: Stop drinking alcohol, it hinders production of blood cells. Eat iron rich meals. If you are not a vegetarian, eat porc liver which has the highest levels of iron. Animal iron sources are assimilated quicker. If you are a vegetarian, try chick peas, leafy vegetables and dried apricots. Always drink orange juice and never milk when eating iron rich food. Vitamin C is essential for the assimilation process. Supplement vitamins b12 and folic acid, especially when vegetarian. Spend your holidays walking in a high altitude zone.
