apparently it would turn more pink-grey, like pork. As you know we have many similarities with pigs: can get sunburnt, can eat almost anything, and even pig organs are apparently the only ones that could one day be transplanted to humans (whereas those from apes are too incompatible).

I seem to remember hearing that when that serial killer got caught with all the body parts in his refrigerator a long time ago, and they found out he was eating humans-that he said in an interview that humans pretty much taste like pork-so Im going with white. Human-the other other white meat. EW!

I just want to raise an interesting insight too..

Ahhhm, when someone get burned, whats the initial color change are they getting?

I had a friend who burned his legs and hoooorey, his skin turned white..

But as time passed by, of course it changes color again, just when you have a cooked meat hanging for ages!

Actually humans believe it or not are genetically 98% identical to pigs. Therefore we taste almost identical to pork....this is an educated answer brought to you way to early in the morning.
