Assuming you are in the U.S., go to Bondurant. It is reportedly the best in the country. They have all sorts of different courses. A lot of the professional drivers have even gone there.
As far as a "racing" school, Derek Daly's and Skip Barber's schools are both supposed to be good.

If you are in UK or Europe, there are several Rally Driving Schools.
Just sign up with one of them and get initiated into the fun. Don't know about USA - not much rallying there.
