I'm surprised to see that no one has put what I think is Depp's best performance (as well as Tim Burton's best movie):
Ed Wood.
It's a bio-pic about Ed Wood, who has been labeled "the worst film director of all time" (and if you've ever seen an Ed Wood movie you would have to say he's in the running). Depp does a fantastic job of showing the boundless enthusiasm Wood must have had for film, and the film is basically a love letter to movie-making. It has great supporting roles by Bill Murray, Sarah Jessica Parker, and Martin Landau (who won an Oscar for his role), but Depp outshines them all.

The Legend of Sleepy Hollow, where he plays the detective trying to catch the headless horseman. He is hilarious. I think he faints in this movie about every 5 minutes. Great!
