try putting lots of stitches on your needle before pulling the thread through.
They are very time consuming, but the stitches don't need to be that close, so 5-6 stitches per inch should do it. That combined with multiple stitches on the needle should speed things up.
Don't gather it until you've sewn all the way around (you probably do that anyway, but just to be certain ;)

This is pretty much an individually cut and hand-stitched thing, so it's going to be time consuming. You can speed up cutting your circles by using the Olfa Circle Cutter (first link). You can find it at most craft and quilting stores. I recommend cutting a bunch of circles in advance and pressing the edges in, then keep a pile next to your chair so you can stitch away while you watch tv. Put some in a plastic bag to stitch during your lunch break at work, in the waiting room, in the drive through, etc.
You might be able to make the pressing go faster if you have a template that can be ironed over - the lid of a can with the edge filed so it isn't too sharp, for example. Cut half an inch larger than the template, then put the template in the middle of the fabric and give it a dose of spray starch. Press the fabric over the edge of the template. It should hold its shape fairly well because of the starch.
For those who don't know what a yo-yo is, it's a circle of fabric that is stitched around the edge and drawn into a balloon shape, then pressed flat, so there's a gathered circle in the center. Hundreds of these are sewn together at the edges to create a bed cover.
