We just "discovered" HBO programming a few years ago.
Sopranos - We started watching the Sopranos DVDs in early 2005, and were able to finish them and sign up for HBO to watch Season 7.
Deadwood - I watched Seasons 1 and 2 on DVD this Spring, and caught Season 3 on HBO. I really, really loved Season 1, and enjoyed the other two as well (although Season 3, not as much in its entirety).
Rome - I am currently watching the DVDs, and I am greatly enjoying it - a lot more than I thought I would. I can see why it costs $100 million per season.
I am planning to watch Carnivale on DVD next..
And Band of Brothers is on my list - I have seen bits of that syndicated on other cable channels, and I think I will enjoy it.
I keep hearing good things about "The Wire", but I haven't seen it.
Obviously, I like HBO's darker side of programming.

I absolutely love Big Love
Lucky Louie is not bad
personally, I'm not a big fan of Deadwood. I like westerns, i'm a huge fan of gratuitous profanity, but I just dont dig the show
I watched just a bit of Rome and liked what I saw, just didnt get a chance to watch it all before it was taken off HBO On Demand
Over on Showtime, I like weeds, but my wife definately digs it more than i do

Rome is very good, if sometimes brutal. I'm looking forward to the 2nd season.
Curb Your Enthusiasm was good, but it seems to devolve from clever plots to just lots of shouting matches. Haven't watched it in a while. If you're renting, though, the first season is definitely worth a look at least.
Six Feet Under was quirky. It was kinda fun, in a macabre way, to try and guess who would die in the opening of each episode and how.
And of course there's Sex and the City. There's definitely a lot of stuff that got left on the cutting room floor on the way to syndication.

Oz was my favorite, too bad it ended, but the last season was starting to go downhill anyway.
I also have really enjoyed Carnivale. But I have not been able to find out if they are working on a 3rd season or not. I sure hope they do, the 2nd season closer left me wanting much more!
I am wanting to check out Rome, I've heard it was good and I get into stuff about that era (I love I Claudius). I have it coming up soon on my Netflix queue...
