I need to write a long sentence based on.. Sammy caught a fish. This is what I came up with. any suggestions or corrections?
At the age of eleven, Sammy, full of enthusiasm sat patiently for three long hours in the hot summer eat before e caught the biggest mackerel the town of Springfield had seen in the last ten years, ever since the arrival of the much feared killer whales.

Try this:
"Eleven year old Sammy, who was full of quiet enthusiasm, sat patiently for three long hours in the hot summer heat before he finally caught the biggest mackerel that the town of Springfield had seen in the last ten years."
You don't need the killer whales bit because it's just extra information and being about a major topic such as killer whales if being used, it should be at the start not end. Also, being enthusiastic usually means you're hyperactive, but quiet enthusiasm means you feel excited on the inside but still calm outside so you would have the patience to sit and wait. Other than those things and forgetting to have the 'h' at the start of 'heat' and 'he' (which I assume is more a typing error rather than spelling), your sentence is quite good.

At 11 Sammy enthusascially caught a large Mackerel after a 3 hour stint in the hot sun. Since the arrival of the killer whales ten years ago, this has been the largest Macerkal to have been caught in Springfield.

Sammy was full of enthusiasm at age 11. He's patiently sit for as long as three hours in the summer's heat till he caught the biggest mackeral. Sammy caught the biggest mackeral in his whole town of Springsfield. It has been ten years since Springsfield has seen due to the arrival of killer whales.
