from wat u have posted ..

they mean tat they have modified the red hat linux...taken out most features tat arent necessary..make it light...and modify it in such a way so tat it suits their servers...
remember linux is open source..and since "the company" u refer to can be quite big..they mite have the necessary resources and engineers to modify the linux to suit their needs...

to put it short..strip down version refers to a basic or bare minimum version...can do only minimal things...

Kind of like taking a VW chassis and then making a dune buggy out of it. Basically a bug but with features specific to the users needs.

well it most likely doesnt have anything fancy on it. like no gui or nothing but what the program needs to run. basically a kernel and some file structure stuff and associations to files it may need

stripped down means that they remove programs that they do not need to run the process they need for their business.
you increase processing speed and security by removing to the bare bones necesary. no overhead. Uses less memory,etc.
