what the stuff is that they glue on top of the pressboard that looks like wood? But it is like a shelf paper or vinyl type of thing. I want it to match the checkered end table I have. Can anyone help me?

Veneer

That is a laminate of wood grain colored plastic on top of pressboard. Since it isn't solid wood you can't stain over the laminate, You can buy new veneer or laminate from some hardware stores and then glue it on yourself. It is hard to answr without seeing what you are trying to get to.

Veneer is a very thin slice of wood that you glue onto the pressed board. Normally you use a contact adhesive to attach the veneer, be careful because as soon as the 2 surfaces touch they are next to impossible to separate.

Laminate is made of plastic, fiberglass etc.
Veneer is made of thin sheets of wood that you can easily press to the surface. Checkered sheets of veneer stained different colors would be beautiful! Best bet is to go to your nearest hardware store and look near the kitchen cabinets for both.

I doubt you will be lucky enough to match the other table. I would buy a piece of underlayment, tape it off in the pattern you want and paint or stain, then min-wax finish

contact paper..... comes in all types of finshes... or you could cover it with formica that you can get at a lumber store
