you should work on how to desalinize water (that is to remove salt from water).
that would be a great project since lots of areas of the earth use desalinization because they have no fresh water
most of the western world takes fresh water for granted and it would be an excellent project to show your class just how important and critical fresh water is.
good luck...

Make beer....impress guys....Then tell your teacher you are testing Malt, Sugar and Corn to see which one produces the most Ethanol for Automobile uses in the future....
Just use 3 different jars--one for each, take an initial Specific Gravity reading, add yeast, then ferment for one week before the show....then take the final Specific Gravity the morning of the show and compare the Starting and Ending values....the one with the most DIFFERENCE is the one that created the most alcohol....
Sugar should be the winner. Also do your homework on the newer Alcohol concepts including sawgrass which seems to have a good "return on energy consumed" over all the others.....including sugar.
Then deal with the "Renewable Resource" aspect of Alcohol, and list the present vehicles that are E85 Vehicles.....also take note that FORD designed his vehicles to run on alcohol....
You might even.......dare I say it? Try to run a lawnmower on straight alcohol.....I can't guarantee that it would work, but a can of E85 or even some EVERCLEAR might be worth trying....but get an OK from Mom or Dad to do that......

Demonstrate electron probability waves using water. That would be fun. But, if you have no idea what I am talking about, you could try these:
1. Demonstrate how lenses and other materials refract light.
2. Show the hardness of different, common, rocks using the Mohs scale.
3. Demonstrate how computer chips and other storage mediums actually store information.
