It allows specialization of different "parts" of the body. Without individual cells, a single Area would be formed (like a huge amoeba).
Cells allow for organs, like heart, muscle tissue, eye, liver, brain and other to do do specific jobs within the body.

we have cells because it makes the components needed to live much more easy to obtain. If you are just one big blob instead of composed out of many cells, it would take oxygen much longer to diffuse into the center of your body. A heart without oxygen would just simply kill you. Also, without cells, if we get a cut or something like that, there won't be anything to stop the bleeding, causing us to die once again. There are many other things that allow us to live thanks to cells.
