Jeez, you've mixed apples and oranges and two other fruits in this question.
1. Does the soul always think? No the soul never thinks. The soul feels. And yes, it is always on, in both transmit and receive mode.

2. Do we always think? No. It is possible to space out entirely or partially.

3. No, one or the other system, usually both, is always on, certainly including during dreams.

the "active" soul is in union with God. Our soul lives on after death, and this fact you can accept or deny. That is up to you.
we are mind, body and spirit (soul). Again you can accept this fact or deny it. Our soul is primal to our existence so yes to answer your question the soul is always thinking

Well, if we were to completely stop thinking, then we'd stop breathing as well. Respiration is triggered through the brain, I think some where in the medula amblegada (sp?). So yeah, I assume we don't stop thinking until we die, or come really close to death.

Here is my opinion.

I don't believe that I stop thinking, even if I try to stop thinking, I am thinking about not thinking.

Even if I'm not imagining images or words doesn't mean that I've stopped thinking. If it was possible to stop thinking then I don't believe we would have dreams.
