I can tell you which ones to avoid -
Avoid the Rio Casino buffets - both the carnival and the seafood buffet - I worked in the Casino and saw lots of people on many many occasions being tended to buy medics from food poisoning in the hallways or in the employee corridor out of the way of the public view. (but some people love it so it's at your own risk). And avoid the Mirage buffet - it's been changed and the food is not as good as it used to be.
I do recommend the MGM, the Paris hotel buffet, Mandalay Bay, Monte Carlo is okay, and the Stratosphere lunch buffet is shockingly delicious.

I would go for a late lunch and then stay for dinner. This gives you the better price and you get dinner items, like crab and shrimp.
Aladdin is my favorite buffet overall. The quality and selection is above the others. Sterling is excellent too, but the $58 price tag may be a bit steep for most people. Paris has great desserts and crab legs. Wynn and Bellagio are also good choices.

I'm not sure about lunch and dinner but I thought that the MGM Grand had a wonderful breakfast buffet. It was absolutely huge, tasty and reasonably priced (around $9.99 a person). Avoid the buffet at the Monte Carlo - almost everytime I went food was cold or severely undercooked.

In my experience the Aladdin's buffet is the best. Lunch will cost you 15$ and dinner will run you 25$. The food is great with 9 different themed stations. The Mirage was good but they changed it like 4 years ago and now it sucks. It basically feels like your eating in a post modern high school cafeteria.

I would recommend The Village Buffet Seafood buffet at the Hotel Rios. For me it is one of the best. They have lobsters,crab legs.oysters as well as international food like other buffet. this is highly recommend if budget is not an issue. The other one that I like is at the Bellagio. I've tried each of these restaurant twices and I don't like the one from The Wynn,sorry. I hope this information will help.:)

The best buffet on the strip is at the Paris Hotel. I think the price is within reason for what other big named hotels are charging. They've got a great selection of surf and turf and their dessert are to die for!!! I highly recommend it.

I would suggest lunch,but dinner is also a great meal
Its really too much food to eat during the dinner hour
Also, if you go for lunch, you wont need dinner (and that's the truth)
The number one buffet is the new Wynn Resort
The Bellagio (my all time favorite) is #2
Prices for lunch are approx 20.00 per person and well worth it

On a Friday or Saturday night, unless you like waiting in lines, do lunch instead of dinner.
I personally like the Mandalay Bay buffet. Circus Circus' one was good a few years ago, I don't know if it's changed. Excalibur's was good when I went to that one ten years ago also. My friend, who's a Vegas local, SWEARS by the one at the Mirage. I've never been, so I can't say. (I did see someone here didn't like it so much though....) A couple of guidebooks say the one at Bally's is amazing. Again, never been to that one.

The absolute best is the Sterling Brunch at Bally's. It is only on Sunday from 11 am until 3 pm. Of course, you probably could not afford it. You pay for quality and you definitely get quality at the Sterling Brunch.
