To transfer electrical power (or stop) across a set of contacts using another source of power.
A coil is energized, making it an electromagnet. The magnet pulls in an armature with a set of contacts on it, making or breaking power.
It is a switching device.

As obsean said it is a switching device it's used to remotely activate something with a high amperage draw without the need for a heavy high amperage switch. (For example headlights and brakelights in an automobile.)
