my family does. We are lebanese and to keeep the eye away we wear blue or have these neclalace with a picture of an eye that is on a blue bead.

Many Italians do, especially the older generations.
They do many things to prevent the evil eye (which is really jealosy).
They carry a small sack of salt.
They drop oil in boiling water to see how it coagulates, and then say some words to stop the hex.
They use the index finger and the pinky finger to form "Horns", and sometimes point them at a would-be evil eye.
They wear the same thing on their neck, or just a red bull horn.
I'm sure there's much more they do.

Greeks do!Orthodox church do but it doesn't accept anything but wearing a cross for protection and saying a prayer to make you feel better and neutralize the bad energy.

I don't think chinese do. They'll usually go "bai-sun" in which they make offerings to their ancestors for luck and protection. And they keep the sign of luck on their door upside-down to welcome it in year round.
