I got a list of dates and meetings one says INDUCTION PRACTICE and the other date under it says INDUCTION CEREMONY....What does that mean?

They have a run-through before the actual ceremony in order to make sure that everything will run smoothly. They want to make sure that everyone knows where they will be sitting, and that they know where to walk onstage, etc.

The honor society is a society; a club. You are inducted or initiated into it. So you do induction practice in order to learn how to behave at the induction ceremony, just like people hold a wedding rehearsal to let everyone know what they are supposed to do at the wedding ceremony.

A junior class corresponding secretary is the person who is responsible for communications in the junior class NHS group. Probably nearest equivalent would be like the secretary of a club or corporation, which takes notes (minutes) of the meetings and sends them out to all members.

Its just a simple ceremony to be in the honor society. You'll have a practice and then the actual ceremony. Its pretty simple-- they just announce names, kind of like graduation. You do usually get a cool little sash at graduation to wear over your robe if you are in the honor society.
