Sounds like you have a good relationship with the boss. You could do the standard flowers/balloons/card thing, or offer to take her to lunch with team if that's feasible. Or a gift card from a store she likes or something like 3 months of NetFlix if she's a movie watcher.

If you're on really good terms with your boss and you know her pretty well, you could go to the craft store and pick out something to make her. It's heartfelt and personal, but fairly inexpensive and you don't have to be an expert at crafting to make something really nice. If you don't know her that well or your relationship is strained, go with a gift card to the local coffee shop or a restaurant nearby. Don't forget a card!

Invite her for a nice breakfast with you and all the team. Just take a short time and maybe there give her some small present bought with money of all the team.

Find out if she has any interests beyond exploiting her gullible work force, and then don't get her something related to those interests.

You could also suggest she takes her team out for a morale boosting treat.

When is Employee Day ?

What are her likes and dislikes? Hobbies? Maybe a gift cert. for lunch? If she's a coffee junkie, why not a basket with different coffees, a mug, etc.

Boss' Day is a joke. It's just another way for an overpaid lackey to get something else from sappy people who call it a "gift of appreciation". Don't bother - they won't appreciate it.
