then he lets it sit there and it goes cold and he chucks it away..... should I tell him how ungrateful he is or just refuse to do anything for him again? I wouldn't normally mind, but I did go well out of my way to get him a double espresso... (he didn't even say please)

he may not have done it deliberately if he is in an office may have been too busy, you could have reminded him not to let his nice cup of coffee go to waste or next time he asks say to him will the this one get drunk or will it get thrown away like the last one but make it a bit lighthearted he may feel guilty if he knows what he did.

Oh, thats soooo rude!
(resisting the temptation to say next time spit in it!)
My boss used to ask me to get coffee for her every day, I'd take it into her office and she wouldn't even acknowledge I was there.
So I'd take her order and not bother to get it for her.
So next time you see him be ultra nice and ask him if he wants a coffee, ask if he wants any food with that...cookie, cake, pastry.
Then just dont get it for him.
If he comes looking for you, just say something else came up.
Its petty but it will make you feel sooooooo much better.

I'd let it go and not worry about it. And if he asks again, he'll get what he deserves when you refuse to go out of your way a second time.

Without curising and raising your voice too much, let him know that what he did was rude and disrespectful to you. And that from now on if he would like to have a double expresso, to get it himself.
This get's what your feeling off your chest and he get's to know how he made you feel
It's better then holding it in.

Why did you get him a coffee you shouldn't do things for people and expect some sort of reward for it. so it went cold and he didnt drink it so wot maybe he had a lot on his mind.

I would say Sorry I don't have time. And let Him get his own. Sounds like user to me. Don't be a usee. Don't know if that is a word but you know what I mean.

Lesson learned. If you're not close friends, don't say anything, and just remember this when he asks for anything in the future.

Did he pay for it? I mean was this in a coffee shop? If so, I guess he has the right not to drink it.
