Maintaining the body at 37 degrees celcius, is more of due to the proteins (e.g. enzymes) involved in biological processes in our body.

This is because, proteins are generally unable to withstand high temperatures, and thus, if the temperature were to be higher, many of them would be denatured and subsequently not be able to carry out their functions.

37 degrees celcius is the optimum temperature for many biological processes, as well as for the growth of mammalian cells in us.

It's not so much as of due to water.

Water will probably just be evaporating at 37 degrees (if left out in the open), but not boiling until it reaches its boiling point of 100 degrees celcius.

Nothing happens to water at 37 degrees celsius. This is simply a temperature which our bodies function at normally.

I'm not sure it is so much a function of the water, as it is that 37°C is the temperature at which the bodily processes function most efficiently.

What happens to water at 100 degree Fahrenheit?
