No matter if you are using a Rewritable DVD or not, in any Sony Camcorder...
When you select finalizing... It records and select menus for playing in conventional DVD players. If your DVD is rewritable you will be able to use it or format again.

It usually means either closing the disc (CD I'm assuming) after writing files to it. This can be in two ways. 1 where you will be able to later add more files and 2 where the disc is closed so that no additional files can be added.

Finalizing the disc closes the disc so nothing else can be added and also so it can play on other players.

to make a long story short - the recorder is finishing up the disc so that it can be played on other machines
no other new information can be added to the disk

its a way of 'finishing off' the burning process, it just 'seals' the disc so no more can be added
